"PåskeLammene" er slaktet
og de var killinger! 
"το κατσικάκι" - killing

Påsken 2002 solgte min slakter, som var en av 4 slaktere i byen, over 400 dyr. Påsken 2008 ble det 460 dyr fra min slakter og hans brors butikk.
Nå er det 5 slaktere her, tror jeg.
Ofte er påskelammene killinger!
De fleste mener at killing- og geitekjøtt har bedre smak enn sauen. De beste killingene stammer fra øyene Gioura, Kira Panagia og Piperi ute i Marineparken, der drikker de ofte saltvann og det gir en ekstra spiss til kjøttet!
Skopelos er kjent for sin flotte geitestamme, ofte eksporteres det dyr til andre steder,
i og utenfor Hellas.
Her på øya gjetes flokkene, ofte fra bil, men mest av gjetere med sine hunder, så dyrene lever et trygt liv. Ofte ser man flokker med killinger i en inngjerding mens mødrene er ute og spiser! Killinger er søte!

2007; kl.6 fredag morgen var det to tøffe nordmenn som gikk i mørket opp en sti til der hvor slaktningen skulle fåregå! De tenkte jo ikke på at det var kl.6 "Greek time"! Så det var ingen der bortsett fra hunden DogDog! Da vi gikk opp dit sammen i ni tiden var 3 killinger slaktet og de holdt på med den fjerde!
Senere da vi kom tilbake for å hente
"vår" killing, var ni slaktet og de hadde
"bare " 11 igjen!

Dette har vært rart å oppleve, men jeg ville ikke være det foruten!
Dette slakter ritualet har eksistert i flere tusen år. Man slakter en gris senhøstes, eller som nå til jul og et "påskelam" når våren er kommet!
Dette er ikke sport, dette er livet! Jeg vet ikke om jeg helt klarer å sette de rette ord til det!

The Easter Lambs are slaughtered,
and they were kids!

Easter 2002 my butcher, who was one of 4 in town, sold more than 400 animals. Easter 2008 my butcher and his brother sold 460 animals.
Now we have 5 butcher shops in town, I think. Often the Easter
lamb is a kid. Most here means that kids and goats has better taste than the sheep. The best kids comes from the islands of Gioura, Kira Panagia and Piperi out in the National Marine Park.

hey often drink sea water and that gives an extra taste to the meat.
Skopelos is famous for it good hear
d of goats, often they export animals to other parts of Greece and even outside Greece. The flocks here are mostly looked after by shepherds, often from a car, also dogs are around the flocks, the animals lives a rather safe life. You may see kid locked in while the mothers are out feeding themselves.

2007; Friday morning at 6 o'clock two brave  Norwegians walked up in the dark to the place were the slaughtering was going to take place! They did not think about that is was Greek Time! Nobody was there but the dog, names Dog Dog! When we went up there together at about 9 o'clock three kids was done and they were working on the 4th! Going back later  to get our kid, nine was done only 11 to go!

It was very strange to witness this, but I am pleased that I did! This ritual has been going on for thousand years and more. A pig is slaughtered at the end of the autumn, now Xmas, and a lamb in the spring. This is not for sport, but a way of staying alive! I do not know if I can put the right words for this, but

How to pick out a kid? Hvem sin tur er det nå?
Jeg så ikke selve avlivningen på nært hold, det fristet ikke! Men de gjorde det pent, kuttet strupen, hadde gravet en grop hvor de la killingen slik at blodet rant ned der! Når den var død, kuttet slakteren et kutt i bakbenet og så "blåste" de opp killingen med en stor sykkelpumpe, helt utrolig å se på, den ble nesten som en ballong og alle bena pekte ut og opp! Såvidt jeg forsto var det for at skinnet skulle splitte seg fra kroppen, så det var forholdsvis lett å få av! Så hengte de dyret etter bakbena, labbene og hornene ble kuttet av og så flådde de det! Innmaten ble tatt vare på, mye av den skal brykes til "Majeritzaen" påskesuppen, som skal spises lørdag kveld etter middnatt, nåe fasten er slutt! Resten laves det "Kåkåretsi" av, et langt grillspyd som grilles ved siden av påskekillingen! I did not see the actual slaughtering close up, I did not want to! But they did it in a such good way as possible! The cut the trout and laid the kid down, they hade made a big whole in the ground where the blood was running out. When it was dead, the butcher cut a hole in one of the back legs and they blew the body up, so that the skin in a way got lose from the body, it looked like a balloon and all the legs were pointing up! Then they hung the body by the back legs, the feet and the horns were cut off and they they took off the skin.
They took care of the innards, some of it will be used in the "Majeritza" - Easter soup
- on Saturday night, the rest will be used on Sundays "kokoretsi"  - a spit that will be grilled next to the kid!

Vår PåskeKilling er i den sorte baggen, og nå henger den i kjelleren!
Vil vi klare å spise det? Søndag morgen starter grillingen!

Our EasterKid is in the black bag, and is now hanging in the basement!
Will we be able to eat it? We will start the grilling on Sunday morning!
